INGREDIENTS

  • Veggie Bread
  • Ingredients
  • 2/3 of a bag of frozen broccoli and cauliflower (200 grams)
  • ½ cup oats, ground into flour
  • ¼ cup liquid egg whites
  • 2 tablespoons plain Greek yogurt
  • ½ teaspoon baking powder
  • ¼ tsp baking soda
  • 2 tsp herbs and spices of choice (feel free to use a few different kinds to make up the mixture)

INSTRUCTIONS

  1. Preheat your oven to 350.
  2. Steam broccoli and cauliflower in the microwave until soft. Place in a food processor and process until smooth.
  3. Add the oat flour, baking powder and soda, and spices. Process until mixed.
  4. In a smaller separate bowl mix together the egg whites and yogurt. Add this mixture to the dry ingredients and stir together.
  5. Pour the mixture into two mini loaf pans and bake for 23-25 minutes. The top should be slightly golden brown and a knife should come out clean.
